Coconut Cream Pie Balls

This is a really easy frozen dessert recipe, that requires only a few ingredients.  I love coconut, so I am always trying to think of dessert ideas that include coconut.  It is also low calorie, which is also a big plus.

1 pkg coconut cream instant pudding mix
2 cups unsweetened almond milk
1 cup cool whip
4 tbsp shredded coconut
1 serving (29 grams) Nilla Wafers

First of all combine the instant pudding mix and almond milk.  I didn't use the whole package of pudding, I had a lot extra left over.  That was okay though, I just ate the rest of the pudding plain.  Coconut cream pudding is so yummy. :-D  Next combine the cool whip, coconut, and 57 grams (about 1/8) of the pudding.  Then freeze for about 2 hours.

Place the Nilla Wafers in a Ziploc bag, and crunch until they are a crumb consistency.  



Once the pudding mixture is frozen scoop in to tablespoon sized balls, and roll in Nilla Wafer crumbs.  Serve frozen.

Makes about 10 balls.
Calories: 49 calories per ball.

Chocolate Chip Cookie Dough Balls

Here is another recipe that I tested from Pinterest.  It tastes just like cookie dough, but without the raw eggs.  If I make these again I would probably use less chocolate chips, probably only a half of a cup instead of a full cup.

1/2 cup melted butter
1/2 cup sugar
1/4 cup brown sugar
1 tsp. vanilla
2 tbsp. water
1 1/4 cup flour
1 cup semi-sweet chocolate chips

Combine all ingredients in a large mixing bowl.



Roll dough into tablespoon sized balls.  Keep refrigerated and serve cold.

Makes about 20 balls.
Calories: 141 per ball.

Pumpkin Bread

This is a family recipe, that we always make for Thanksgiving and Christmas.

3 1/2 cup flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
4 eggs
1 cup oil
2/3 cup water
2 cup pumpkin
3 cup sugar
1 bag (11 oz) semi-sweet chocolate chips

Preheat oven to 350.
Mix together all ingredients.  Stir in semi-sweet chips.  Pour batter in to 3 greased and floured loaf pans.  Bake for 1 hour.

1 slice (50 grams) - 196 calories

Cool Whip Cookies

This is a recipe I found on Pinterest.  It is a very easy cookie recipe, they are also quite delicious!



1 box cake mix - 1600 calories
1/4 cup liquid egg - 34 calories
1 cup lite Cool Whip - 200 calories
1/4 cup powdered sugar- 120 calories

Preheat oven to 350.  Combine cake mix, egg and Cool Whip.  Roll a spoonful of dough in powdered sugar and place on cookie sheet. Bake for 8 to 10 minutes.

You can use any type of cake mix you like.  I used Pillsbury Funfetti cake mix, and it turned out really well.  They actually taste just like the holiday custard pies from McDonalds!

Makes about 20 cookies

Homemade doughnut holes

This is a recipe I found on Pillsbury, it's really good :)


but it does take a pretty long time to complete, enjoy!

ingredients:

A couple of cups of oil ( for frying)
2 packages Pillsbury Grands Flaky Biscuits
1 Flavor injector (I found mine at Target, in the Kitchen utensil section)

Filling:

1 1/2 cups Crisco
3 cups powdered sugar
4 tbsp. Half & half
1 1/2 tsp. vanilla

Glaze:

1/2 cup Glaze
4 cups powdered sugar
2 tsp. vanilla

You start out by turning your fryer on to 350, Then put all ingredients for filling in a medium size mixing bowl and beat for about 10 minutes, set aside.
Then take the Pillsbury biscuits and cut them into fourths, then start frying them, till golden brown. I suggest putting them on a paper towel when you take them out of the fryer.
When you finish frying all of them take your flavor injector and put the filling in it ( I put the filling in a plastic bag and cut the tip of to more easily put it in the flavor injector) Then start injecting the biscuits with filling.
Once you finish that, mix ingredients for glaze in a medium size bowl.
Then just roll the biscuits in the glaze then set them on a plate and let them harden.

Marshmallow Whip Cheesecake

This is a recipe Olivia found on Pinterest, and I love it :)
Even if you don't normally like marshmallow things you will still like this.
It taste kind of like a light cheesecake.

Graham Cracker Crust: 

40 squares of graham crackers (crushed):1300-calories
1/2 cup sugar:360-calories
1/2 cup butter or margarine (melted):800-calories 

Mix above ingredients. Press into top and sides of 9 x 13' greased pan. Reserve 1/2 cup for top. 


Filling: 

10 1/2 oz. large marshmallows (40 marshmallows):1000-calories 
3/4 cup milk:68-calories 
2 - 8-oz. packages of cream cheese:480-calories 
12-oz. Container of fat-free Cool Whip:570-calories 

Melt marshmallows and milk over low heat. Beat cream cheese; add marshmallow mixture. Cool. Fold in Cool Whip. Spread into crust and sprinkle with remaining graham cracker crust. Refrigerate until set.


Serving size: 60 grams ( or 1/26 )

Apple Cinnamon Oatmeal Muffins (nearly sugar-free)

1 1/2 cup flour - 660 calories
1 cup unsweetened applesauce - 100 calories
3/4 cup liquid egg (equivalent to 3 eggs) - 100 calories
1 cup almond milk - 30 calories
1 1/2 tsp baking powder - 0 calories
1/2 tsp baking soda - 0 calories
2 tsp cinnamon - 12 calories
3 packages apple cinnamon instant oatmeal - 390 calories

Preheat oven to 375
Stir together all ingredients, put batter in greased muffin tins.
Bake for 10 to 12 minutes

Servings: 20
Calories: 68 (one muffin)



Sweet Wontons (mini cheesecakes)

1/3 cup sugar: 240-calories
2 8oz. packages fat free cream cheese: 480-calories
2 tsp. vanilla: 0-calories
6 tbsp. liquid egg (equivalent to 2 eggs): 50-calories
20 wonton wrappers: 400-calories

preheat oven to 350
beat all ingredients in large bowl (besides wonton wrappers).
grease 20 muffin tins, line with wonton wrappers.
Spoon mixture into wonton wrappers.
Bake for 15-20 minutes.

Servings: 20
Calories: 60 (for 1)


Almond Poppy Seed Muffins (low calorie)

2 cups flour: 800-calories
1 cup sugar: 720-calories
1 1/2 tsp. baking powder: 0-calories
1 1/2 tsp. salt: 0-calories
1 1/2 cups fat free milk: 135-calories
1 cup applesauce: 100-calories
9 tbsp. liquid egg (equivalent to 3 eggs): 75-calories
1 1/2 tsp. almond extract: 0-calories
1 1/2 tbsp. poppy seeds: 71-calories

Stir together all ingredients put batter in 30 greased muffin tins.
bake for 15-20 minutes or until firm to the touch.
